High Nutritional Value:
Microgreens are simply young seedlings of vegetables or herbs that are generally harvested in 1-3 weeks. They are an emerging food source that are known for their high nutrient load. Studies have revealed that that microgreens may offer up to 40 times the nutrients of their mature counterparts.
These remarkable plants are not only high in vitamins but also minerals and phytochemicals. Although more microgreen studies are needed, the results have been promising. Currently, studies support type 2 diabetes management. For example, broccoli and fenugreek greens may help in regulating blood, improving sugar levels by as much as 44%.
Other studies support reduced heart disease risk, reduced cancer risk, reduced anemia, improve cognitive capability and afford vision protection.
Sustainable Cultivation:
In a world where sustainable food cultivation is imperative to our future food security, students learn the fundamental concept of sustainability in an interactive, practical and fun way.
Additionally, teachers find growing microgreens is particularly suited for STEM classroom education. They require just a small space, grow in a short period of time and can easily be grown organically and sustainably. There are numerous varieties and they are colorful, tasty and have a great texture. And, Children love them!
